2 carrots, peeled and diced

2 stalks celery, diced

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

2 tablespoons all-purpose flour

2 tablespoons olive oil

1 cup shredded cheddar cheese for garnish

Fresh parsley, chopped for garnish

Instructions:

Cook the Beef:

Heat olive oil in a large pot over medium heat. Add ground beef, onion, and garlic, cooking until the beef is browned and onions are soft.

Add Vegetables:

Stir in the carrots and celery, cooking for another 5 minutes until they start to soften.

Thicken the Soup:

Sprinkle the flour over the mixture, stirring to coat the beef and veggies. Gradually add the beef broth, stirring to combine.

Add Potatoes & Season:

Mix in the cubed potatoes, salt, pepper, and paprika. Bring the soup to a boil, then reduce the heat and simmer for 20-25 minutes, or until the potatoes are tender.
