Broccoli Cheddar Soup – A Must-Save Recipe!

Ingredients:

1 large head of broccoli, chopped into florets

1 small onion, finely diced

2 cloves garlic, minced

4 cups chicken or vegetable broth

2 cups shredded cheddar cheese

1 cup heavy cream

2 tablespoons butter


Salt and pepper to taste

Instructions:

In a large pot, melt the butter over medium heat. Add the onion and garlic, sautéing until the onion turns translucent about 5 minutes.

Add the chopped broccoli and broth, bringing everything to a boil. Lower the heat to a simmer, cooking for about 10 minutes, or until the broccoli is tender.

Use an immersion blender or a regular blender to puree the soup until its smooth and creamy.

Stir in the heavy cream and shredded cheddar, mixing until the cheese is fully melted.

Season with salt and pepper to taste.
