Christmas Eggnog Bread
I made this festive bread last Christmas, and it was a hit!
Ingredients:
2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup brown sugar
2 tsp baking powder
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp salt
1 cup eggnog
1/2 cup vegetable oil
2 large eggs
1 tsp vanilla extract
1/2 cup chopped pecans optional
Instructions:
Preheat your oven to 350F 175C. Grease a 9×5-inch loaf pan.
In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, nutmeg, cinnamon, and salt.
In a separate bowl, combine the eggnog, vegetable oil, eggs, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined. If desired, fold in the chopped pecans.
Pour the batter into the prepared loaf pan, spreading it evenly.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
