Fresh Apple Cake with Brown Sugar Frosting

Ingredients:

For the Cake:

1 cup vegetable oil

2 cups granulated sugar

3 large eggs

3 cups all-purpose flour

1 teaspoon baking soda

2 teaspoons vanilla extract

1 cup chopped pecans

3 cups peeled and chopped apples about 3 medium apples

For the Brown Sugar Frosting:

1/2 cup unsalted butter

1 cup packed brown sugar


1/4 cup evaporated milk

1/2 teaspoon vanilla extract

Directions:

Prepare the Oven and Pan: Preheat your oven to 350F 175C. Grease a 9 x 13-inch baking pan to prevent sticking.

Mix the Wet Ingredients: In a large mixing bowl, combine the vegetable oil, granulated sugar, and eggs. Stir until well blended.

Add Dry Ingredients: Gradually add the flour and baking soda to the wet ingredients, stirring until just combined.

Fold in Flavorings: Stir in the vanilla extract, chopped pecans, and chopped apples until evenly distributed.

Bake the Cake: Pour the batter into the prepared baking pan, spreading it evenly. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 2 hours before frosting.

Prepare the Frosting: In a small saucepan, combine the butter, brown sugar, and evaporated milk. Bring to a boil over medium heat, stirring constantly. Let the mixture boil for 2 minutes, then remove from heat and place the pan in a bowl of ice water.

Beat the Frosting: Beat the frosting mixture until it reaches a spreadable consistency. Stir in the vanilla extract.
