This quick and addictive churro-inspired toffee combines the flavors of cinnamon sugar with the crunch of saltines and a smooth layer of chocolate. Perfect for an easy sweet treat!

Ingredients:

1 sleeve saltine crackers about 40 crackers

1 cup unsalted butter

1 cup granulated sugar

1 teaspoon vanilla extract

1 tablespoon ground cinnamon

1 cup semisweet chocolate chips

Additional cinnamon sugar 1/4 cup granulated sugar 1 teaspoon cinnamon for topping

Directions:

Prepare the Pan and Oven: Preheat your oven to 350F 175C. Line a baking sheet with parchment paper for easy removal. Arrange the saltine crackers in a single layer, edge-to-edge, covering the entire baking sheet.


Make the Toffee Base: In a medium saucepan over medium heat, melt the butter and sugar together, stirring frequently until fully melted and combined. Once the mixture starts to bubble, let it cook undisturbed for about 3 minutes, until it thickens slightly and becomes golden brown. Remove from heat and stir in the vanilla extract and ground cinnamon.

Pour Over Crackers: Carefully pour the hot toffee mixture over the saltine crackers, spreading it with a spatula to ensure that all the crackers are evenly coated.

Bake: Place the baking sheet in the preheated oven and bake for 78 minutes, or until the toffee is bubbly and slightly darker in color.

Add the Chocolate Layer: Remove the baking sheet from the oven and immediately sprinkle the chocolate chips over the hot toffee layer. Let them sit for 2-3 minutes to soften. Once the chocolate chips have melted, use a spatula to spread the chocolate evenly over the entire toffee layer.

Add Cinnamon Sugar Topping: While the chocolate is still warm, sprinkle a light layer of cinnamon sugar over the top for an extra churro flavor.

Cool and Break Into Pieces: Allow the toffee to cool completely at room temperature, or refrigerate for faster setting. Once fully hardened, break the toffee into bite-sized pieces.

Serve and Enjoy! Store in an airtight container for up to a week for fresh, crunchy toffee whenever you want a treat.
