Pistachio Fudge
Ingredients:
3/4 cup white chocolate chips
6 tablespoons unsalted butter
1/3 cup water
1 package 4-serving size instant pistachio pudding mix
3 cups powdered sugar
1/2 cup shelled pistachios, roughly chopped
Instructions:
Prepare the Pan: Line an 8×8-inch square baking pan with foil, leaving some foil overhang on the sides for easy removal. Set aside.
Melt the Base Ingredients: In a large microwave-safe bowl, combine the white chocolate chips, butter, and water. Microwave on high for 1 minute, then stir until smooth. If the chocolate chips arent fully melted, microwave for an additional 30 seconds, stirring after each interval, until everything is melted and combined.
Add Pistachio Flavor: Stir in the pistachio pudding mix until the mixture is well combined and takes on a green tint.
Incorporate Powdered Sugar: Gradually add the powdered sugar, one cup at a time, stirring thoroughly after each addition to avoid lumps. Once the sugar is fully incorporated, the mixture should be thick and creamy.
Add Pistachios: Fold in the chopped pistachios, distributing them evenly throughout the fudge mixture.
Press and Set: Press the fudge mixture into the prepared baking pan, smoothing the surface with a spatula. Refrigerate for at least 2 hours, or until the fudge is firm.
Slice and Serve: Once the fudge has set, lift it out of the pan using the foil overhang and peel away the foil. Use a sharp knife to cut the fudge into bite-sized squares.
Storage: Store the pistachio fudge in an airtight container in the refrigerator for up to one week.
