Butter Pecan Fudge
Ingredients:
1 cup unsalted butter
2 cups brown sugar
1/2 cup milk
3 cups powdered sugar
1 teaspoon vanilla extract
1 cup chopped pecans, toasted
Directions:
Prepare the Pan:
Line an 88-inch baking pan with parchment paper, allowing some overhang on the sides to lift the fudge out easily once its set.
Toast the Pecans:
In a dry skillet over medium heat, toast the chopped pecans until fragrant, stirring occasionally to prevent burning. Remove from heat and set aside.
Cook the Butter Mixture:
In a medium saucepan over medium heat, melt the butter.
Add brown sugar and milk to the melted butter, stirring constantly. Bring the mixture to a boil and allow it to boil for 2 minutes, continuing to stir.
Cool and Combine:
Remove the saucepan from heat and let it cool slightly, about 5-10 minutes.
Gradually stir in powdered sugar and vanilla extract, mixing until the fudge mixture is smooth and fully combined.
Add the Pecans:
Gently fold in the toasted pecans, ensuring they are evenly distributed throughout the fudge.
Pour and Set:
Pour the fudge mixture into the prepared pan, spreading it evenly with a spatula.
Let the fudge cool at room temperature for about 2 hours, or until it is completely set.
Slice and Serve:
Once set, lift the fudge from the pan using the parchment paper overhang. Cut into squares and enjoy this rich, buttery treat!
