Doritos Taco Salad
Ingredients:
1 lb ground beef or ground turkey for a lighter option
1 packet taco seasoning mix
6 cups chopped romaine or iceberg lettuce
1 can black beans, drained and rinsed
1 can corn kernels, drained
1 cup cherry tomatoes, halved
1 cup shredded cheddar cheese
1/2 cup red onion, chopped finely
2 cups crushed Nacho Cheese Doritos or flavor of your choice
1 cup Catalina dressing or substitute with ranch for a creamier option
Optional toppings: sliced black olives, diced avocado, sliced green onions, sour cream
Instructions:
Cook the Beef: In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spoon as it cooks. Once fully cooked, drain any excess fat. Add the taco seasoning according to the packet instructions usually with a small amount of water and stir to combine. Simmer for a few minutes until the seasoning is fully absorbed. Set the beef aside to cool slightly.
Prepare the Salad Base: In a large mixing bowl, add the chopped lettuce, black beans, corn, cherry tomatoes, shredded cheddar cheese, and red onion. Toss to combine evenly.
Assemble the Salad: Once the beef has cooled slightly, add it to the salad mixture. Add the crushed Doritos for a crunchy texture and toss lightly to mix.
Add the Dressing: Pour the Catalina dressing over the salad and toss gently until all ingredients are well-coated. Add more dressing if desired for extra flavor.
Garnish and Serve: For additional flavor and presentation, top with any optional ingredients like sliced black olives, diced avocado, green onions, or a dollop of sour cream. Serve immediately to enjoy the Doritos crispness.
