Pecan Pie Fudge
Ingredients:
1 cup granulated sugar
1 cup brown sugar, packed
1/2 cup heavy cream
1/2 cup unsalted butter
1/4 cup light corn syrup
1/4 tsp salt
1 tsp vanilla extract
2 cups pecans, chopped plus extra for topping
Instructions:
Prepare a Baking Dish:
Line an 8×8-inch pan with parchment paper or foil, leaving overhang for easy removal. Set aside.
Cook the Fudge Base:
In a saucepan over medium heat, combine granulated sugar, brown sugar, heavy cream, butter, corn syrup, and salt.
Stir until the mixture reaches a full boil. Continue to boil for 5 minutes, stirring constantly.
Add Vanilla and Pecans:
Remove from heat and stir in vanilla extract and chopped pecans until fully incorporated.
Set the Fudge:
Pour the fudge mixture into the prepared pan. Smooth the top and sprinkle extra pecans on top if desired.
Allow the fudge to cool completely at room temperature, then refrigerate for at least 2 hours.
Serve:
Once firm, lift the fudge from the pan using the parchment overhang and cut into squares. Enjoy!
