Traditional Christmas Fruit Cake
This Traditional Christmas Fruit Cake is a moist, rich cake filled with mixed fruits and nuts, perfect for holiday gatherings. It has a beautifully dense texture and festive colors from the candied cherries, making it a holiday favorite!
Ingredients:
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1/2 cup milk
1 cup mixed dried fruits such as cherries, pineapple, apricots, chopped
1/2 cup walnuts or pecans, chopped
1/4 cup candied cherries, cut in half
1/4 cup candied green cherries, cut in half
1/4 cup candied red cherries, cut in half
Instructions:
Preheat Oven and Prepare Pan:
Preheat your oven to 325F 163C.
Grease and flour a loaf or bread pan.
Prepare Dry Ingredients:
In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
Cream Butter and Sugar:
In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the butter mixture, alternating with milk, beginning and ending with the dry ingredients. Mix until just combined.
Fold in Fruits and Nuts:
Gently fold in the mixed dried fruits and chopped nuts, ensuring they are evenly distributed throughout the batter.
Assemble and Bake:
Pour the batter into the prepared pan and smooth the top.
Place the halved candied cherries on top for decoration.
Bake in the preheated oven for 70-80 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve:
Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
