Forgotten Chicken
Ingredients:
4 boneless, skinless chicken breasts
1 cup long-grain white rice, uncooked
1 can 10.5 oz cream of chicken soup
1 can 10.5 oz cream of mushroom soup
1 1/2 cups chicken broth
1 packet onion soup mix
Salt and pepper, to taste
Fresh parsley, chopped optional, for garnish
Directions:
Preheat the Oven:
Preheat your oven to 350F 175C.
Lightly grease a 9×13-inch baking dish.
Prepare the Dish:
Spread the uncooked rice evenly across the bottom of the prepared baking dish.
Mix the Soups:
In a mixing bowl, whisk together the cream of chicken soup, cream of mushroom soup, and chicken broth until smooth.
Assemble Layers:
Pour half of the soup mixture over the rice, spreading it evenly.
Place the chicken breasts over the rice and season with salt and pepper.
Pour the remaining soup mixture over the chicken, ensuring the chicken is fully covered. Sprinkle the onion soup mix over the top.
Bake:
Cover the dish with foil and bake for 1 hour and 30 minutes, or until the chicken is cooked through and the rice is tender.
For a lightly browned top, remove the foil in the last 15 minutes of baking.
Garnish and Serve:
Garnish with fresh parsley, if desired. Serve warm and enjoy this hearty, flavorful dish.
