Chicken with Lemon-Caper Sauce

Ingredients:

4 boneless, skinless chicken breasts

Salt and pepper, to taste

1/2 cup all-purpose flour

2 tbsp olive oil

1/4 cup fresh lemon juice about 2 lemons

1/2 cup chicken broth

2 tbsp capers, drained

2 tbsp unsalted butter


1 tsp fresh parsley, chopped for garnish

Instructions:

Season the chicken breasts with salt and pepper. Dredge each breast in flour, shaking off any excess.

Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 4-5 minutes per side, until golden and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add chicken broth and lemon juice. Stir, scraping up the browned bits from the bottom of the skillet. Bring to a simmer for 2-3 minutes.

Stir in capers and butter, cooking until the butter is melted and the sauce thickens slightly.

Return the chicken to the skillet and spoon the sauce over the top. Cook for 2 more minutes, letting the flavors combine.

Garnish with fresh parsley and serve hot!
