Dark Chocolate Fudge Brownies
Ingredients:
8 oz dark chocolate 70% cocoa, chopped into small pieces
3/4 cup unsalted butter, cut into cubes
1 1/4 cups granulated sugar
3 large eggs, at room temperature
1 teaspoon vanilla extract
3/4 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon salt
Directions:
Preheat the Oven:
Preheat your oven to 350F 175C. Grease an 8×8-inch baking pan and line it with parchment paper, leaving an overhang on the sides for easy removal.
Melt the Chocolate and Butter:
In a medium saucepan over low heat, combine the chopped dark chocolate and butter. Stir constantly until melted and smooth. Remove from heat and let it cool slightly.
Mix in Sugar, Eggs, and Vanilla:
Once the chocolate mixture has cooled a bit, whisk in the granulated sugar until fully combined.
Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract until the mixture becomes glossy and thick.
Combine Dry Ingredients:
In a separate bowl, sift together the flour, cocoa powder, and salt.
Gently fold the dry ingredients into the chocolate mixture, being careful not to overmix. The batter should be thick and smooth.
Pour and Spread the Batter:
Pour the batter into the prepared pan, spreading it evenly to the edges with a spatula.
Bake the Brownies:
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs for extra fudgy brownies, or clean for a firmer texture. Avoid overbaking to keep the brownies moist and fudgy.
Cool Completely:
Allow the brownies to cool in the pan on a wire rack for at least 15 minutes. Use the parchment overhang to lift the brownies out of the pan.
For clean slices, wait until they have cooled completely before cutting into squares.
