Sweet and Sour Meatballs
Ingredients:
1 lb ground beef
1/2 cup breadcrumbs
1/4 cup milk
1 large egg
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup finely chopped onion
1 clove garlic, minced
1/4 cup ketchup
2 tablespoons brown sugar
2 tablespoons soy sauce
1 tablespoon vinegar
1/2 cup pineapple chunks
1/2 bell pepper, diced
1 tablespoon cornstarch
1/4 cup water
Directions:
Prepare the Meatballs: Preheat your oven to 400F 200C and line a baking sheet with parchment paper.
Mix the Meatball Ingredients: In a large bowl, combine the ground beef, breadcrumbs, milk, egg, salt, pepper, chopped onion, and minced garlic. Mix well until fully combined.
Shape and Bake: Form the mixture into small meatballs and arrange them on the prepared baking sheet. Bake for 20-25 minutes, or until the meatballs are cooked through.
Prepare the Sauce: While the meatballs are baking, make the sweet and sour sauce. In a saucepan, combine the ketchup, brown sugar, soy sauce, and vinegar. Bring the mixture to a gentle simmer over medium heat.
Add Pineapple and Bell Pepper: Stir in the pineapple chunks and diced bell pepper. Let the mixture cook for about 5 minutes to allow the flavors to blend.
Thicken the Sauce: In a small bowl, mix the cornstarch and water to create a slurry. Slowly stir the slurry into the sauce and cook for an additional 2-3 minutes, or until the sauce has thickened.
Combine Meatballs with Sauce: Add the cooked meatballs to the saucepan and stir gently to coat them thoroughly in the sauce.
Serve: Serve these flavorful sweet and sour meatballs over rice or noodles, garnished with chopped green onions or sesame seeds if desired.
