Ingredients:

3 packages 8 oz each cream cheese, softened

1 1/4 cups granulated sugar divided

1 1/2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

1 tablespoon lemon zest

1/4 cup lemon juice

1/2 cup raspberry preserves

3 large eggs

1 cup sour cream

1 teaspoon vanilla extract

Lemon slices and fresh raspberries, for garnish

Crystallized sugar, for garnish

Instructions:

Prepare the Pan and Crust:

Preheat your oven to 325F 163C and grease a 9-inch springform pan.

In a medium bowl, combine the graham cracker crumbs, 1/4 cup of sugar, and melted butter. Mix until well combined, then press the mixture firmly into the bottom of the prepared pan to create an even crust.


Make the Cheesecake Filling:

In a large mixing bowl, beat the softened cream cheese and the remaining 1 cup of sugar until smooth and creamy.

Add the eggs one at a time, beating well after each addition. Then, gently stir in the sour cream, lemon juice, lemon zest, and vanilla extract until just combined.

Assemble and Add Raspberry Swirl:

Pour the cheesecake batter over the crust in the springform pan, spreading it evenly.

Drop spoonfuls of raspberry preserves on top of the cheesecake batter. Use a knife to swirl the preserves gently into the batter, creating a beautiful marbled effect.

Bake:

Bake in the preheated oven for 55-60 minutes, or until the center is nearly set. The cheesecake should have a slight jiggle in the center when done. Cool on a wire rack for 10 minutes.

Cool and Chill:

After 10 minutes, run a knife around the edge of the pan to loosen the cheesecake. Let it cool completely before removing the rim of the pan.

Refrigerate for at least 4 hours, or ideally overnight, to allow the cheesecake to set fully.

When ready to serve, garnish with lemon slices, fresh raspberries, and a sprinkle of crystallized sugar for an extra touch of elegance.
