French Salted Log with Sea Flavors: Crab, Smoked Salmon & Shrimp
A festive and savory delight, this salted log combines the delicate flavors of crab, smoked salmon, and shrimp, enhanced by creamy cheese and a hint of lemon zest. Perfect as a show-stopping appetizer for holiday gatherings or special occasions!
Ingredients:
200g crab meat fresh or canned, well-drained
150g smoked salmon cut into small pieces
6 peeled prawns for decoration
250g fresh cheese mascarpone or Philadelphia type
3 eggs separated into yolks and whites
1 tablespoon mustard
10 cl 100 ml liquid cream
Zest of 1 lemon plus wedges for garnish
1 tablespoon chopped chives or dill, based on preference
Salt and pepper to taste
Directions:
Prepare the Egg Base:
Preheat the oven to 180C 350F. Grease a log mold or rectangular pan and line it with parchment paper.
Separate the egg yolks and whites into two bowls.
Create the Mixture:
In the bowl with the yolks, add the fresh cheese, mustard, and liquid cream. Whip the mixture until smooth and creamy.
Beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the whites into the yolk mixture using a spatula, being careful to maintain the airy texture.
Incorporate the Sea Ingredients:
Add the crab meat and smoked salmon pieces to the mixture. Stir gently to combine without deflating the egg whites.
Assemble and Bake:
Pour the mixture into the prepared log mold, smoothing the top with a spatula.
Bake for about 30 minutes, or until the log is golden and firm to the touch.
Cool and Set:
Once baked, remove the log from the oven and allow it to cool completely in the mold to ensure it sets properly.
Decorate and Serve:
Carefully unmold the cooled log onto a serving plate.
Arrange the peeled shrimp on top for decoration. Add lemon wedges around the plate and sprinkle with chopped chives or dill for freshness and color.
