Ruths Chris Sweet Potato Casserole
Ingredients:
For the Crust:
3/4 cup brown sugar
1/4 cup all-purpose flour
3/4 cup chopped pecans
1/4 cup melted butter
For the Sweet Potato Mixture:
3 cups mashed sweet potatoes
1 cup white sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
2 large eggs, beaten
1/2 cup melted butter
Directions:
Prepare the Crust:
In a medium bowl, mix together the brown sugar, flour, chopped pecans, and melted butter. Stir until the mixture is crumbly. Set aside.
Prepare the Sweet Potato Mixture:
In a large bowl, combine the mashed sweet potatoes, white sugar, salt, vanilla extract, beaten eggs, and melted butter. Mix well until smooth and fully incorporated.
Assemble:
Grease a 9×13-inch baking dish. Pour the sweet potato mixture evenly into the dish.
Sprinkle the crumbly pecan mixture evenly over the top of the sweet potato layer.
Bake:
Preheat your oven to 350F 175C.
Bake the casserole for 30-35 minutes, or until the topping is golden brown and the casserole is bubbly around the edges.
Serve:
