Caramel Apple Cheesecake Bars
Ingredients:
For the Crust:
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1/4 cup granulated sugar
For the Cheesecake Layer:
2 8-ounce packages cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
For the Apple Layer:
3 medium apples Granny Smith or Honeycrisp, peeled, cored, and diced
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons granulated sugar
For the Streusel Topping:
1/2 cup all-purpose flour
1/2 cup brown sugar, packed
1/2 cup rolled oats
1/4 cup unsalted butter, cold and cubed
For the Caramel Drizzle:
Store-bought caramel sauce or homemade if preferred
Directions:
Prepare the Crust:
Preheat your oven to 350F 175C. Grease and line a 9×13-inch baking pan with parchment paper.
In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until well combined.
Press the mixture firmly into the bottom of the prepared pan to form an even layer. Bake for 8-10 minutes. Remove and let cool slightly.
Make the Cheesecake Layer:
In a large bowl, beat the cream cheese and sugar together until smooth.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Pour the cheesecake batter over the cooled crust and spread evenly.
Prepare the Apple Layer:
In a small bowl, toss the diced apples with cinnamon, nutmeg, and sugar.
Sprinkle the apple mixture evenly over the cheesecake layer.
Make the Streusel Topping:
In another bowl, combine the flour, brown sugar, and oats. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
Sprinkle the streusel evenly over the apples.
Bake the Bars:
Bake in the preheated oven for 40-45 minutes, or until the cheesecake is set and the topping is golden brown.
Cool and Chill:
Allow the bars to cool to room temperature, then refrigerate for at least 3 hours or overnight.
Serve with Caramel Drizzle:
Slice into squares and drizzle with caramel sauce before serving.
