Christmas Stollen Recipe
Ingredients:
1 cup 250ml warm milk
1 tbsp caster sugar
2 tsp 7g sachet dried yeast
4 cups 600g plain flour
1 tsp mixed spice
1/2 cup 110g extra caster sugar
125g unsalted butter, melted
1 egg
1 tsp vanilla extract
1 cup 160g mixed dried fruit
1/2 cup 75g slivered almonds
Icing sugar, for dusting
Instructions:
Activate the Yeast: Combine the warm milk, 1 tablespoon of sugar, and dried yeast in a small bowl or jug. Stir gently and set aside for about 10 minutes, or until it turns frothy, indicating the yeast is active.
Prepare the Dry Mix: In a large mixing bowl, sift the plain flour and mixed spice together. Stir in the additional 1/2 cup of caster sugar, ensuring its well combined.
Combine Wet and Dry Ingredients: Make a well in the center of the flour mixture and pour in the yeast mixture, melted butter, egg, and vanilla extract. Mix everything together with a wooden spoon or spatula until a soft dough forms.
Knead the Dough: Turn the dough out onto a floured surface. Knead for about 8-10 minutes, or until the dough becomes smooth and elastic.
First Rise: Place the kneaded dough into a lightly greased bowl. Cover it with plastic wrap or a damp tea towel and let it rest in a warm spot for approximately 1 hour, or until it doubles in size.
Incorporate Fruits and Nuts: Once the dough has risen, punch it down gently. Spread it out slightly on a floured surface and sprinkle the mixed dried fruits and slivered almonds over it. Knead the dough briefly to distribute the fruit and nuts evenly.
Shape the Loaves: Divide the dough into two equal portions. Roll each portion into an oval about 28cm x 18cm. Fold each oval lengthwise, creating a slight overlap in the middle. This creates the traditional stollen shape.
Second Rise and Bake: Place the shaped loaves onto a lined baking tray. Allow them to rest for 20-30 minutes while you preheat your oven to 180C 160C fan-forced. Bake for 30 minutes, or until the loaves are golden brown and sound hollow when tapped on the bottom.
Cool and Dust: Transfer the loaves to a wire rack to cool completely. Once cooled, generously dust with icing sugar to finish.
