Peanut Butter Pinwheels
Ingredients:
1/2 cup unsalted butter, softened
4 cups powdered sugar
1/4 cup milk
1 teaspoon vanilla extract
1/2 cup peanut butter creamy or crunchy
Instructions:
Prepare the Dough:
In a large mixing bowl, beat the softened butter until creamy.
Gradually add the powdered sugar, alternating with the milk, mixing until a dough-like consistency forms.
Add vanilla extract and mix until fully incorporated.
Roll Out the Dough:
Place the dough between two sheets of parchment or wax paper and roll it into a thin rectangle about 1/4 inch thick.
Spread the Peanut Butter:
Gently spread a thin, even layer of peanut butter over the rolled-out dough, leaving a small border around the edges.
Roll Into a Log:
Starting from one edge, carefully roll the dough into a tight log. Use the parchment paper to help guide the rolling.
Chill:
Wrap the log tightly in plastic wrap and refrigerate for at least 1-2 hours, or until firm.
Slice the Pinwheels:
Once chilled, use a sharp knife to slice the log into 1/4-inch thick pinwheels.
Serve:
Arrange the pinwheels on a serving tray and enjoy! These sweet treats can be stored in the refrigerator for up to a week.
