Homemade Butterscotch Bars
Ingredients:
For the Crust:
1 cup all-purpose flour
1/2 cup unsalted butter, softened
1/4 cup granulated sugar
For the Butterscotch Layer:
1 14 oz can sweetened condensed milk
1 cup butterscotch chips
1/4 teaspoon salt
1 teaspoon vanilla extract
For Topping:
1/2 cup butterscotch chips optional, for garnish
Instructions:
Preheat the Oven:
Preheat your oven to 350F 175C. Grease and line an 8×8-inch baking dish with parchment paper.
Make the Crust:
In a mixing bowl, combine the flour, softened butter, and granulated sugar. Mix until a crumbly dough forms.
Press the dough evenly into the bottom of the prepared baking dish.
Bake for 12-15 minutes, or until the edges are lightly golden. Remove from the oven and let it cool slightly.
Prepare the Butterscotch Layer:
In a saucepan over low heat, combine the sweetened condensed milk, butterscotch chips, and salt. Stir continuously until the chips are fully melted and the mixture is smooth.
Remove from heat and stir in the vanilla extract.
Assemble the Bars:
Pour the butterscotch mixture over the baked crust, spreading it evenly with a spatula.
Sprinkle the additional butterscotch chips on top for garnish.
Bake:
Return the dish to the oven and bake for an additional 15-20 minutes, or until the top is set and slightly golden.
Cool and Slice:
Allow the bars to cool completely at room temperature, then refrigerate for 1-2 hours to set.
Once chilled, remove from the baking dish and cut into squares.
