Cosmic Praline Crunch
Ingredients
For the Praline Crunch Base:
1 cup hazelnuts, toasted
1 cup pecans, toasted
cup caramel chips
cup freeze-dried strawberries crushed into powder
1 cup puffed rice cereal
For the Cosmic Glaze:
cup sugar
2 tbsp water
1 tbsp light corn syrup
1 tsp edible glitter silver or gold
1 tsp activated charcoal powder for a cosmic black hue
1 tsp raspberry extract
For the Galactic Topping:
Popping candy various colors
Edible sugar stars
Tiny shards of colored isomalt
Directions
Step 1: Prepare the Praline Base
Mix the Base: In a large bowl, combine toasted hazelnuts, pecans, caramel chips, and puffed rice cereal. Set aside.
Create the Praline: In a saucepan over medium heat, melt sugar and water until it turns a deep amber color. Remove from heat and immediately pour over the nut mixture, stirring quickly to coat everything evenly.
Step 2: Make the Cosmic Glaze
Cook the Glaze: In a small saucepan, combine sugar, water, and corn syrup. Heat until the mixture reaches 240F 115C on a candy thermometer.
Add Cosmic Elements: Stir in the edible glitter, charcoal powder, and raspberry extract. The glaze should be shiny, black, and slightly thickened.
Step 3: Assemble the Cosmic Praline Crunch
Coat with Glaze: Pour the cosmic glaze over the praline crunch base, tossing gently to coat everything evenly.
Spread to Cool: Spread the mixture onto a parchment-lined baking sheet and let it cool for 10-15 minutes.
Step 4: Add the Galactic Topping
Sprinkle popping candy, edible sugar stars, and shards of colored isomalt over the cooled praline crunch. Press gently to adhere.
