Cinnamon Noodle Kugel
Ingredients:
8 oz egg noodles, cooked and drained
4 large eggs
1/2 cup sugar
1 tsp vanilla extract
1/2 tsp ground cinnamon
1/4 tsp salt
1/2 cup sour cream
1/2 cup cottage cheese
1/4 cup melted butter
1/4 cup raisins optional
Instructions:
Preheat oven to 350F 175C. Grease a 9×13-inch baking dish.
In a large bowl, beat the eggs and sugar together until well combined. Add vanilla, cinnamon, salt, sour cream, and cottage cheese.
Stir in the cooked noodles, melted butter, and raisins if using.
Pour the noodle mixture into the prepared baking dish and spread evenly.
Bake for 45-50 minutes until the top is golden and the kugel is set.
Let cool for a few minutes before serving.
