Mint Chocolate Chip Snowball Cookies
These delightful snowball cookies combine the refreshing taste of mint with the sweetness of mini chocolate chips, coated in a delicate layer of powdered sugar!
Ingredients
For the Dough:
1 cup unsalted butter, softened
cup powdered sugar, sifted
2 cups all-purpose flour, spooned and leveled
teaspoon salt
1 teaspoon mint extract or peppermint extract
Green food coloring gel food coloring works best for vibrant color
cup mini chocolate chips
For the Coating:
Additional powdered sugar for rolling
Instructions
Step 1: Make the Dough
Preheat your oven to 350F 175C and line a baking sheet with parchment paper.
In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
Add the mint extract and a few drops of green food coloring to the mixture, blending until evenly colored.
Gradually mix in the flour and salt, stirring until just combined.
Fold in the mini chocolate chips gently to distribute them evenly throughout the dough.
Step 2: Shape the Cookies
Using a tablespoon or cookie scoop, portion out the dough and roll it into small balls, about 1 inch in diameter.
Place the cookie dough balls on the prepared baking sheet, spacing them slightly apart these cookies wont spread much.
Step 3: Bake
Bake in the preheated oven for 10-12 minutes, or until the bottoms of the cookies are lightly golden. Avoid overbaking to maintain a soft, melt-in-your-mouth texture.
Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
Step 4: Coat with Powdered Sugar
Once the cookies are completely cool, roll them in a generous layer of powdered sugar, ensuring they are fully coated.
For a festive touch, you can roll them in a second coat of powdered sugar just before serving.
