Ingredients:

For the Crust:

1 cup unsalted butter, softened

2 cups all-purpose flour

1/2 cup powdered sugar

For the Lemon Filling:

4 large eggs

2 cups granulated sugar

1/4 cup all-purpose flour

1/2 tsp baking powder

1/3 cup fresh lemon juice about 2-3 lemons


1 tbsp lemon zest optional

Instructions:

Preheat oven to 350F 175C and grease a 9×13-inch baking dish.

In a bowl, mix butter, flour, and powdered sugar until crumbly. Press into the bottom of the prepared pan to form the crust.

Bake the crust for 15-20 minutes, or until lightly golden. Set aside.

In another bowl, whisk together eggs, granulated sugar, flour, baking powder, lemon juice, and zest until smooth.

Pour the lemon mixture over the baked crust.

Bake for an additional 25-30 minutes, or until the filling is set and slightly golden at the edges.

Cool completely and sprinkle with powdered sugar before slicing into bars.
