Birria de Res Tacos Beef Birria Tacos
Ingredients:
2 lbs beef chuck roast or short ribs
5 dried guajillo chiles, stemmed and seeded
3 dried ancho chiles, stemmed and seeded
2 cups beef broth
1 large onion, chopped
4 garlic cloves
1 tbsp apple cider vinegar
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp ground cinnamon
1 tsp salt adjust to taste
12 corn tortillas
1 cup shredded cheese optional
Fresh cilantro, chopped for garnish
Lime wedges for serving
Instructions:
Boil the dried chiles in water for 10 minutes to soften them.
Blend the softened chiles with beef broth, onion, garlic, vinegar, cumin, oregano, cinnamon, and salt into a smooth marinade.
Pour the marinade over the beef in a slow cooker or large pot. Cook on low heat for 6-8 hours until the meat is tender and shreddable.
Shred the beef and reserve the cooking liquid consomé.
Dip tortillas in the consomé, then cook them on a hot griddle. Add shredded beef, cheese optional, and fold into a taco.
Cook until crispy on both sides and serve with cilantro, lime wedges, and extra consomé for dipping.
