Ingredients:

For the Salmon:

1 lb salmon fillets

1 tbsp olive oil

1 tsp paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp cayenne pepper

1/2 tsp ground cumin

1/2 tsp black pepper

1/2 tsp salt

For the Salsa:

1 ripe mango, diced

1 ripe avocado, diced

1/4 cup red onion, finely chopped

1/2 red chili pepper, minced optional for heat


Juice of 1 lime

2 tbsp fresh cilantro, chopped

Pinch of salt

For the Tacos:

8 small tortillas

1 cup shredded cabbage

Lime wedges for serving

Instructions:

Mix the paprika, garlic powder, onion powder, cayenne pepper, cumin, black pepper, and salt. Rub the salmon with olive oil and coat with the seasoning blend.

Heat a skillet over medium-high heat. Cook the salmon for 3-4 minutes per side until blackened and cooked through. Flake into bite-sized pieces.

In a bowl, gently combine all salsa ingredients: mango, avocado, red onion, chili pepper, lime juice, cilantro, and salt.

Warm the tortillas in a pan or microwave.

Assemble tacos with cabbage, blackened salmon, and a generous scoop of mango avocado salsa.
