Valentines Cream Cheese Butter Mints
Ingredients:
4 oz cream cheese, softened
4 tbsp unsalted butter, softened
1 tsp vanilla extract
4 cups powdered sugar
Food coloring red or pink for Valentines Day
1/4 tsp peppermint extract optional for a minty twist
Directions:
In a large mixing bowl, combine softened cream cheese and butter. Beat until smooth and creamy.
Add vanilla extract and peppermint extract if using, then mix well.
Gradually add powdered sugar, 1 cup at a time, mixing until a soft dough forms.
Divide the dough into separate portions if using multiple colors. Add a few drops of food coloring to each portion and knead until the color is evenly distributed.
Roll the dough into small balls or shape into hearts for a festive Valentines look. Flatten slightly with a fork or shape as desired.
Place the mints on a parchment-lined baking sheet and allow them to air dry for 2-3 hours, flipping once halfway through.
Store the mints in an airtight container at room temperature or in the refrigerator for a firmer texture.
