Tasty Lentil Tacos
Ingredients:
1 cup dried lentils or 2 cups cooked lentils
1 tbsp olive oil
1 small onion, diced
2 garlic cloves, minced
1 tsp cumin
1 tsp chili powder
1/2 tsp smoked paprika
Salt and pepper to taste
1 cups vegetable broth or water
8 small tortillas
1/2 cup diced tomatoes
1/4 cup chopped cilantro
1/4 cup diced red onion
1 avocado, sliced
Lime wedges for serving
Instructions:
If using dried lentils, rinse them well. In a pot, bring the lentils and vegetable broth or water to a boil. Reduce heat, cover, and simmer for about 20-25 minutes until lentils are tender. Drain excess liquid and set aside.
Heat olive oil in a pan over medium heat. Add diced onion and garlic, cooking for 5 minutes until soft.
Stir in the cumin, chili powder, paprika, salt, and pepper. Add cooked lentils to the pan and stir to combine. Cook for 3-4 minutes until heated through.
Warm tortillas in a separate pan or microwave.
Assemble tacos by adding the lentil mixture to each tortilla, then topping with diced tomatoes, chopped cilantro, diced red onion, and avocado slices.
Serve with lime wedges and enjoy!
