Sweet Mooncakes With Spiced Walnut and Red Bean Filling Recipe

Ingredients:

– 1 cup all-purpose flour

– 1/4 cup golden syrup

– 1/4 cup vegetable oil

– 1/4 teaspoon alkaline water

– 1 cup cooked red bean paste

– 1/2 cup finely chopped walnuts

– 1/4 teaspoon ground cinnamon

– 1/8 teaspoon ground nutmeg

– 1 tablespoon sugar

– Water for brushing


Instructions:

1. In a large mixing bowl, combine the all-purpose flour, vegetable oil, golden syrup, and alkaline water. Mix until smooth to create a soft dough. Cover the bowl with plastic wrap and let the dough rest for 30 minutes.

2. While the dough is resting, prepare the filling. In a bowl, mix the cooked red bean paste, chopped walnuts, sugar, ground cinnamon, and nutmeg. Ensure that all ingredients are combined evenly.

3. After resting, divide the dough into equal portions, depending on the desired size of the mooncakes usually around 30 grams each. Roll each piece into a ball.

4. Flatten each dough ball in the palm of your hand. Place a spoonful of the filling in the center and carefully fold the edges over the filling, sealing it completely. Roll the filled dough back into a ball shape.

5. Preheat your oven to 350F 175C. Prepare a baking tray with parchment paper.

6. Lightly dust a mooncake mold with flour. Place the filled dough ball into the mold and press down to form the mooncake shape. Gently remove it from the mold and place it on the prepared baking tray. Repeat this process for all dough balls.

7. Using a brush, lightly coat the tops of the mooncakes with water to give them a shiny finish before baking.

8. Bake the mooncakes in the preheated oven for about 20-25 minutes or until golden brown. Remove from the oven and let them cool completely on a wire rack.

9. Allow the mooncakes to rest for at least a few hours or overnight before serving to enhance their flavor.
