Soft Vanilla Cupcakes with Blush Pink Buttercream Frosting

Ingredients:
1 1/2 cups all-purpose flour
1/2 cup unsalted butter, softened
2 large eggs
2 tbsp heavy cream
1 cup granulated sugar
1/2 cup whole milk
1 1/2 tsp baking powder
1 tsp vanilla extract
1/4 tsp salt
2 cups powdered sugar
Blush pink food coloring gel or liquid
Instructions:
1. Preheat your oven to 350F 175C and line a muffin tin with cupcake liners.
2. In a large mixing bowl, combine the softened butter and granulated sugar. Cream these together using a hand mixer or a stand mixer until the mixture is light and fluffy.
3. Add the eggs to the butter-sugar mixture, one at a time, ensuring each egg is fully incorporated before adding the next. Pour in the vanilla extract and mix well.
4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt until thoroughly combined.
5. Gradually add the dry ingredient mixture to the wet ingredients, alternating with the whole milk. Always start and end with the dry ingredients, mixing until the batter is smooth and well-blended.
6. Spoon the cupcake batter into the prepared cupcake liners, filling each about two-thirds full to allow for rising.
7. Bake the cupcakes in the preheated oven for 18-20 minutes. Theyre ready when a toothpick inserted into the center comes out clean. Remove from the oven and let them cool completely on a wire rack.
8. While the cupcakes cool, prepare the blush pink buttercream frosting. In a mixing bowl, beat the softened butter until it is smooth and creamy. Gradually add the powdered sugar, one cup at a time, mixing well after each addition until it becomes fluffy.
9. Add in the heavy cream and vanilla extract, continuing to beat until the frosting is light and airy. Incorporate a small amount of blush pink food coloring and stir until you achieve your desired shade of pink.
10. Once the cupcakes are completely cooled, use a piping bag or spatula to elegantly frost them with the blush pink buttercream.
