Mini Tarts with Rose Cream and Gold Leaf
These delicate mini tarts are a charming way to add a touch of elegance to any gathering. Experience the delightful flavors of rose cream surrounded by a buttery tart shell!
Ingredients:
– 200 ml 3/4 cup heavy cream
– 50 g 1/4 cup powdered sugar
– 100 g 1/2 cup white chocolate, chopped
– 100 g 1/2 cup unsalted butter, cold and cubed
– 2 tbsp rose water
– 1 large egg yolk
– 23 drops pink food coloring optional
– 200 g 1 2/3 cups all-purpose flour
– Edible pink roses
– 12 tbsp cold water as needed
– Edible gold leaf
Instructions:
1. Begin by preheating your oven to 180C 350F.
2. In a food processor, place the flour, powdered sugar, and cold, cubed butter. Pulse until the mixture resembles breadcrumbs.
3. Add the egg yolk and 1 tablespoon of cold water to the mixture, pulsing until the dough starts to come together. If its too crumbly, add an additional tablespoon of water.
4. Shape the dough into a ball, wrap it in plastic wrap, and chill in the refrigerator for 30 minutes.
5. Once chilled, roll the dough on a floured surface to about 3 mm thick. Cut circles slightly larger than your tart molds and press them into the molds. Prick the bases with a fork.
6. Bake the tarts in the preheated oven for 12-15 minutes, or until they are golden brown. Allow them to cool completely before removing from the molds.
7. For the rose cream filling, heat the heavy cream in a saucepan over medium heat until it begins to simmer. Remove from the heat and stir in the chopped white chocolate until smooth.
8. Mix in the rose water and pink food coloring if youre using it. Allow the filling to cool to room temperature, then refrigerate until thickened.
9. Once the rose cream is ready, fill each cooled tart shell with it, using either a spoon or a piping bag for a neat finish.
10. To decorate, place a pink edible rose on each tart and add small pieces of edible gold leaf for that luxurious touch.
11. Refrigerate the tarts for at least 1 hour to set, then serve chilled and enjoy their floral elegance!
