– 3 tablespoons meringue powder

Instructions:


1. Begin by preparing the cookie dough. In a large bowl, cream the softened butter with granulated sugar until the mixture is light and fluffy. This should take about 3-5 minutes.

2. Once creamy, add the egg, vanilla extract, and almond extract if using. Mix until everything is well combined and smooth.

3. In a separate bowl, whisk together the flour and salt. Gradually incorporate the dry ingredients into the wet mixture, stirring until a cohesive dough forms.

4. Wrap the dough in plastic wrap and refrigerate for at least 1 hour. Chilling the dough makes it easier to handle and roll out.
