Ingredients:
– 1 cups 360ml heavy whipping cream, divided
– 1 cup 240ml hot coffee or hot water
– cup 50g granulated sugar for white chocolate mousse
– 1 cups 220g all-purpose flour
– cup 120ml vegetable oil
– 1 cup 175g dark chocolate chips for ganache
– 1 cup 175g dark chocolate chips for dark chocolate mousse
– 1 tsp baking soda
– cup 120ml heavy cream for ganache
– 2 large eggs
– 1 cups 300g granulated sugar
– Optional: chocolate shavings, curls, or sprinkles
– tsp baking powder
– tsp salt
– 1 cup 175g white chocolate chips
– 1 cups 360ml heavy whipping cream for white chocolate mousse
– 1 tsp vanilla extract
– cup 50g granulated sugar for dark chocolate mousse
Instructions:
1. Start by preheating your oven to 350F 175C. Grease and line two 9-inch round cake pans with parchment paper.
2. In a large bowl, mix the flour, cocoa powder, baking soda, baking powder, and salt until well combined.
3. In a separate bowl, whisk together the eggs, granulated sugar, and vegetable oil until smooth. Then add the buttermilk and vanilla extract, mixing until combined.
4. Gradually incorporate the dry ingredients into the wet mixture, mixing until just blended. Carefully stir in the hot coffee the batter will be thin.
5. Divide the batter between the prepared cake pans and bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool completely.
6. To make the white chocolate mousse, melt the white chocolate chips with cup of heavy cream in a microwave-safe bowl, stirring until smooth. Allow it to cool slightly.
7. In another bowl, whip the remaining 1 cup of heavy cream with cup of granulated sugar until soft peaks form. Gently fold this whipped cream into the cooled white chocolate mixture.
8. For the dark chocolate mousse, repeat the melting process with the dark chocolate chips and cup of heavy cream. Let it cool before folding in the whipped cream made with cup of granulated sugar.
9. Start assembling your cake by placing one chocolate cake layer on a serving plate. Spread the white chocolate mousse evenly over this layer.
10. Place the second chocolate cake layer on top and smooth the dark chocolate mousse over it evenly.
11. Prepare the ganache by heating cup of heavy cream in a small saucepan until it simmers. Pour it over 1 cup of dark chocolate chips in a bowl and stir until it becomes smooth and glossy.
12. Pour the ganache over the top of the cake, allowing it to drip down the sides.
13. Chill the cake in the refrigerator for at least 2 hours to allow the mousse and ganache layers to set. If desired, garnish with chocolate shavings or decorative curls before serving.
