Strawberry Cookies with White Chocolate Chips

Ingredients:
– 3/4 cup white chocolate chips
– 1 box 15.25 oz strawberry cake mix
– 2 large eggs
– 1/3 cup vegetable oil
– 1 teaspoon vanilla extract
– 1/4 cup pink chocolate chips optional for extra color
Instructions:
1. Start by preheating your oven to 350F 175C. Line a baking sheet with parchment paper to keep your cookies from sticking.
2. In a large mixing bowl, whisk together the strawberry cake mix, eggs, oil, and vanilla extract until a soft and smooth dough forms.
3. Gently fold in the white chocolate chips and pink chocolate chips if using, making sure to reserve a few extra for topping the cookies later.
4. Scoop tablespoon-sized portions of the dough and roll them into balls. Place them on the prepared baking sheet, leaving about 2 inches of space between each cookie.
5. Press a couple of the reserved white chocolate chips gently on top of each dough ball for an appealing bakery-style finish.
6. Bake the cookies in the preheated oven for 9-11 minutes, or until the edges are set but the centers still appear slightly underbaked they will firm up as they cool.
7. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
