Super Moist Chocolate Cake with Perfect Chocolate Ganache

Ingredients:
– 1 cup hot water very hot
– 2 cups white sugar
– 1 cups all-purpose flour
– cup oil
– cup cocoa powder
– 2 large eggs
– 1 tsp baking powder
– 1 tsp baking soda
– tsp salt
– 1 tsp vanilla extract
– 1 stick Nescafé 2g instant coffee
– 200g dark chocolate, finely chopped
– 200ml heavy cream
– 2 tbsp unsalted butter
– 1 cup milk
Instructions:
1. Preheat your oven to 350F 180C. Prepare two 9-inch round cake pans by greasing them with butter and dusting with flour or lining them with parchment paper.
2. In a large mixing bowl, sift together the all-purpose flour, baking powder, baking soda, salt, cocoa powder, and white sugar to ensure a well-blended dry mix.
3. In another bowl, whisk together the milk, oil, eggs, and vanilla extract until the mixture is smooth and uniform.
4. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. The batter will be slightly thin at this point.
5. Dissolve the Nescafé in the very hot water, then pour it into the batter, stirring to mix thoroughly.
6. Divide the batter evenly between the prepared cake pans. Slide them into the preheated oven and bake for approximately 25 to 30 minutes. A toothpick inserted in the center should come out clean when done.
7. While the cakes are baking, prepare the chocolate ganache. In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove it from the heat.
8. Pour the hot cream over the finely chopped dark chocolate and let it sit undisturbed for about 2 minutes. This helps soften the chocolate.
9. After 2 minutes, whisk the mixture until smooth. To add a glossy sheen, stir in the unsalted butter until fully melted and incorporated.
10. Once the cakes are done baking, remove them from the oven and allow them to cool completely in the pans before transferring them to a wire rack.
11. Once cool, place one cake layer on a serving plate. Pour a generous amount of ganache over the top, spreading it evenly. Add the second layer and top it again with ganache, allowing it to drip down the sides for a beautiful finish.
