Amish Applesauce Cake

Ingredients:

1 cups all-purpose flour

cup applesauce

cup granulated sugar

1 large egg optional

cup vegetable oil or melted butter

1 tsp baking soda

tsp baking powder

1 tsp ground cinnamon

tsp ground nutmeg


1 tsp vanilla extract

Instructions:

1. Preheat your oven to 350F 175C. Start by greasing and flouring a 9-inch round or square cake pan, or line it with parchment paper for easy release.

2. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and nutmeg until well combined. Set this mixture aside.

3. In a larger bowl, mix the applesauce and granulated sugar until smooth. If using, beat in the egg at this stage until well blended. Then, stir in the vegetable oil or melted butter and vanilla extract until everything is fully incorporated.

4. Gradually add the dry ingredient mixture to the wet ingredients. Stir gently just until combined, but be careful not to overmix, as this can make the cake dense.

5. Pour the batter into your prepared pan, ensuring its spread evenly across the surface.

6. Bake the cake in the preheated oven for about 25-30 minutes. Check for doneness by inserting a toothpick into the center; it should come out clean when the cake is ready.

7. Allow the cake to cool in the pan for approximately 10 minutes. Afterward, transfer it to a wire rack to cool completely.
