Zucchini Sauté
Ingredients:
4 medium zucchinis, sliced
1 small onion, thinly sliced
2 cloves garlic, minced
1 tbsp olive oil
1 tbsp balsamic vinegar optional
1 tsp dried oregano
1/2 tsp red pepper flakes optional
Salt and pepper to taste
Fresh basil, chopped for garnish
Instructions:
1 Heat olive oil in a large skillet over medium heat.
2 Add the sliced onion and sauté for 3-4 minutes until softened.
3 Add the garlic and cook for an additional 1 minute, being careful not to burn it.
4 Add the zucchini slices to the skillet, and sauté for 5-7 minutes, stirring occasionally, until the zucchini is tender and slightly golden.
5 Season with oregano, red pepper flakes if using, salt, and pepper. Stir to combine.
6 Drizzle with balsamic vinegar if desired and cook for another minute to heat through.
7 Garnish with fresh chopped basil before serving.
