Yellow Rice with Vegetables
Ingredients:
1 1/2 cups long-grain rice
2 tbsp olive oil
1 onion, chopped
1 bell pepper, chopped
1 carrot, diced
1 cup frozen peas
2 1/2 cups vegetable broth
1 tsp turmeric
1/2 tsp cumin
Salt and pepper, to taste
1/4 cup fresh cilantro, chopped for garnish
Instructions:
1 Heat olive oil in a large saucepan over medium heat. Add the onion, bell pepper, and carrot, cooking until softened, about 5-7 minutes.
2 Stir in the rice, cooking for 2 minutes, allowing the rice to lightly toast.
3 Add the vegetable broth, turmeric, cumin, salt, and pepper, and bring to a simmer.
4 Once the mixture starts to simmer, reduce the heat to low and cover. Cook for about 15-18 minutes, or until the rice is tender and the liquid is absorbed.
5 Stir in the peas, cover, and cook for another 3-5 minutes until the peas are heated through.
6 Fluff the rice with a fork, and garnish with fresh cilantro before serving.
