Whole Grain Breakfast Cookies
Ingredients:
1 cup rolled oats
1/2 cup whole wheat flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1/4 cup honey or maple syrup
1/4 cup unsweetened applesauce
1/4 cup almond butter or any nut/seed butter
1 tsp vanilla extract
1/4 cup raisins or dried cranberries
1/4 cup chopped nuts or seeds optional
1/4 cup dark chocolate chips optional
Instructions:
1 Preheat your oven to 350F 175C and line a baking sheet with parchment paper.
2 In a large bowl, mix oats, whole wheat flour, baking soda, cinnamon, and salt.
3 In a separate bowl, combine honey or maple syrup, applesauce, almond butter, and vanilla extract. Stir well.
4 Add the wet ingredients to the dry ingredients and mix until combined. Fold in raisins, nuts, and chocolate chips if using.
5 Scoop 2-tablespoon-sized portions of dough onto the baking sheet, flattening slightly into cookie shapes.
6 Bake for 10-12 minutes or until edges are golden. Let cool before enjoying!
