White Chocolate Cranberry Oatmeal Cookies
Ingredients:
1 cup unsalted butter, softened
1 cup brown sugar
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 1/2 cups rolled oats
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp ground cinnamon
1/2 tsp salt
1 cup white chocolate chips
1/2 cup dried cranberries
Instructions:
1 Preheat your oven to 350F 175C and line baking sheets with parchment paper.
2 In a large bowl, cream the butter, brown sugar, and granulated sugar together until light and fluffy.
3 Add the eggs and vanilla extract, beating well after each addition.
4 In a separate bowl, whisk together the oats, flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
5 Stir in the white chocolate chips and dried cranberries.
6 Drop rounded tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
7 Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
8 Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Enjoy!
