Weekday Meal Prep Chicken Teriyaki Stir-Fry

Ingredients:

– 1 pound chicken breasts, cubed

– 2 tablespoons vegetable oil

– 2 cups broccoli florets

– 1 red bell pepper, sliced

– 2 carrots, julienned

– 1 cup snap peas

– 4 cups cooked brown rice

For the Teriyaki Sauce:

– cup soy sauce

– 2 tablespoons honey

– 1 tablespoon rice vinegar

– 1 tablespoon sesame oil

– 1 teaspoon cornstarch


– 2 cloves garlic, minced

– 1 teaspoon grated ginger

Directions:

1. Cook the Chicken:

– Heat oil in a pan over medium heat. Cook the chicken until browned, about 5-7 minutes.

2. Make the Sauce:

– Mix soy sauce, honey, vinegar, sesame oil, garlic, ginger, and cornstarch in a bowl.

3. Stir-Fry Veggies:

– Add veggies to the pan and cook for 5 minutes. Pour the sauce over, stir, and cook for another 2-3 minutes until thickened.

4. Assemble:

– Divide the cooked rice and stir-fry into meal prep containers. Refrigerate and enjoy throughout the week!
