Vegetarian Chickpea Tacos

Wholesome and flavorful, these chickpea tacos are a healthy and satisfying option for taco lovers!

Ingredients:

1 can 15 oz chickpeas, drained and rinsed

1 tbsp olive oil

1 tsp chili powder

1/2 tsp cumin

1/2 tsp paprika

1/4 tsp garlic powder

1/4 tsp onion powder

Salt and pepper to taste

6 small tortillas corn or flour

1 cup shredded lettuce


1/2 cup diced tomatoes

1/4 cup diced red onions

1/4 cup cilantro chopped

1/2 cup shredded cheese optional

1/4 cup sour cream or yogurt optional

Lime wedges for serving

Instructions:

Heat olive oil in a skillet over medium heat. Add chickpeas and sauté for 2-3 minutes.

Add chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Stir well and cook for another 4-5 minutes until the chickpeas are slightly crispy.

Warm the tortillas in a skillet or microwave.

Assemble the tacos: place a scoop of seasoned chickpeas on each tortilla, then top with lettuce, tomatoes, onions, cilantro, and shredded cheese if desired.

Drizzle with sour cream or yogurt, squeeze lime juice over the top, and serve immediately.
