Vegetarian Chickpea Tacos
A healthy and flavorful twist on tacos, packed with plant-based goodness!
Ingredients:
1 can 15 oz chickpeas drained and rinsed
1 tbsp olive oil
1 tsp chili powder
1/2 tsp cumin
1/2 tsp paprika
1/4 tsp garlic powder
1/4 tsp onion powder
Salt and black pepper to taste
6 small tortillas
1 cup shredded lettuce
1/2 cup diced tomatoes
1/4 cup chopped red onion
1/4 cup crumbled feta or vegan cheese
1/4 cup plain Greek yogurt or vegan sour cream optional
Fresh cilantro for garnish
Instructions:
Heat the olive oil in a skillet over medium heat.
Add the chickpeas, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Stir well to coat the chickpeas with the spices.
Cook for 5-7 minutes, stirring occasionally, until the chickpeas are slightly crispy.
Warm the tortillas in a skillet or microwave.
Assemble the tacos by layering the chickpeas, lettuce, tomatoes, red onion, and feta cheese in the tortillas.
Top with Greek yogurt or vegan sour cream and garnish with fresh cilantro. Serve immediately and enjoy!
