Ultimate Comfort Food Platter
Ingredients:
For the Crispy Fried Chicken Wings:
2 lbs chicken wings
2 cups all-purpose flour
1 tsp garlic powder
1 tsp smoked paprika
1 tsp cayenne pepper
1 tsp salt
1/2 tsp black pepper
1 cup buttermilk
Vegetable oil for frying
For the Spicy Buffalo Wings:
1/2 cup hot sauce e.g., Franks RedHot
1/4 cup unsalted butter
1 tbsp honey
For the Golden Fries & Sweet Potato Fries:
3 large russet potatoes
2 large sweet potatoes
2 tbsp cornstarch
1 tsp smoked paprika
1 tsp garlic powder
Salt to taste
Vegetable oil for frying
For the Loaded Fries Topping:
1 cup shredded cheddar cheese
1/2 cup cooked, crumbled bacon
1/4 cup chopped green onions
Ranch or sriracha mayo, for drizzling
For the Chicken Sandwiches:
4 boneless chicken breasts
1 cup all-purpose flour
1 tsp paprika
1 tsp garlic powder
1/2 tsp cayenne pepper
1 tsp salt
1 egg
1/2 cup buttermilk
4 brioche buns
4 slices of cheddar cheese
Lettuce, pickles, and spicy mayo for assembly
For the Double-Stacked Cheeseburgers:
1 lb ground beef 80% lean
Salt and pepper to taste
4 slices cheddar cheese
4 brioche buns
1 cup caramelized onions
Lettuce and burger sauce for assembly
Directions:
1. Make the Crispy Fried Chicken Wings:
Clean and pat dry the chicken wings.
Mix the flour, garlic powder, smoked paprika, cayenne, salt, and pepper in a bowl.
Pour buttermilk into a separate bowl.
Dip each wing into the buttermilk, then coat it in the flour mixture. Repeat for extra crispiness.
Heat vegetable oil in a deep pan 350F/175C and fry wings in batches for 810 minutes until golden brown and cooked through. Drain on paper towels.
2. Prepare the Buffalo Sauce:
In a small saucepan, melt butter and mix in hot sauce and honey.
Toss fried wings in the buffalo sauce to coat evenly.
3. Make the Fries:
Peel and cut potatoes and sweet potatoes into thin sticks. Soak them in cold water for 30 minutes.
Drain, pat dry, and toss with cornstarch, paprika, garlic powder, and a pinch of salt.
Heat oil to 350F 175C and fry the potatoes in batches until golden and crispy.
4. Prepare Loaded Fries:
Lay the fries on a tray. Sprinkle with cheddar cheese and bacon bits.
Bake in the oven at 375F 190C for 5 minutes to melt the cheese.
Garnish with green onions and drizzle with ranch or sriracha mayo.
5. Cook the Chicken Sandwiches:
Pound the chicken breasts to even thickness.
Mix the flour, paprika, garlic powder, cayenne, and salt.
Whisk the egg and buttermilk in a separate bowl.
Dredge the chicken in the flour mixture, then the egg mixture, and back into the flour.
Fry in hot oil 350F/175C for 68 minutes until golden and cooked through.
Toast brioche buns, add a fried chicken piece, cheddar cheese, lettuce, pickles, and spicy mayo.
6. Cook the Cheeseburgers:
Divide ground beef into 8 thin patties. Season with salt and pepper.
Cook on a hot skillet or grill for 34 minutes per side. Top with cheese slices to melt.
Stack two patties on each bun, adding lettuce, caramelized onions, and burger sauce.
