Ingredients:
– 1 cups all-purpose flour
– cup unsweetened cocoa powder
– 1 cup heavy cream
– 2 large eggs
– 1 cup whole milk
– cup vegetable oil
– 1 cups granulated sugar
– 1 teaspoon salt
– 1 teaspoon baking powder
– 1 teaspoons baking soda
– 1 cup boiling water
– 1 cup semi-sweet chocolate chips
– 8 oz dark chocolate, chopped for ganache
– 2 teaspoons vanilla extract
Instructions:
1. Start by preheating your oven to 350F 175C. Grease and flour two 9-inch round cake pans to ensure the cake comes out smoothly.
2. In a large mixing bowl, combine the flour, cocoa powder, sugar, baking soda, baking powder, and salt. Whisk these dry ingredients together until well blended.
3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry mixture. Beat everything together until the batter is smooth and creamy.
4. Carefully stir in the boiling water; expect your batter to be thin, which will help create a moist final product.
5. Divide the batter evenly between the prepared cake pans and bake in the oven for 30-35 minutes. Check for doneness by inserting a toothpick into the center it should come out clean when the cakes are ready.
6. Allow the cakes to cool completely in the pans for about 10 minutes, then transfer them to wire racks to cool completely.
7. Meanwhile, for the ganache, combine the chopped dark chocolate and heavy cream in a heatproof bowl. Melt together over a double boiler or microwave in short intervals, stirring until you achieve a smooth and glossy consistency.
8. Once the cakes are cool, generously spread the ganache over each layer and let it set at room temperature or in the refrigerator before serving.
