Tortilla Española Spanish Tortilla
Ingredients:
4 medium potatoes, peeled and thinly sliced
1 small onion, thinly sliced
6 large eggs
1/2 cup olive oil
Salt and pepper, to taste
Instructions:
1 Heat the olive oil in a large non-stick skillet over medium heat. Add the sliced potatoes and onions. Cook slowly, stirring occasionally, until soft and tender but not browned, about 20 minutes.
2 In a separate bowl, beat the eggs with salt and pepper. Add the cooked potatoes and onions to the beaten eggs, mixing gently.
3 Heat a little olive oil in the skillet and pour in the egg mixture, spreading it evenly.
4 Cook the tortilla on low heat until the edges are set and the bottom is golden, about 10-12 minutes.
5 Carefully flip the tortilla onto a plate, then slide it back into the skillet to cook the other side for another 5 minutes.
6 Once both sides are golden and set, remove from heat. Let the tortilla cool slightly before slicing into wedges.
