Taco Spaghetti Bake
Ingredients:
12 oz spaghetti, cooked and drained
1 lb ground beef or turkey
1 packet taco seasoning
1 14 oz can diced tomatoes, drained
1 cup black beans, drained and rinsed
1 cup corn kernels
1/2 cup green onions, chopped
2 cups shredded Mexican cheese blend
1/2 cup sour cream
1/4 cup salsa
1 tbsp olive oil
Salt and pepper, to taste
Instructions:
1 Preheat your oven to 350F 175C and lightly grease a 9×13-inch baking dish.
2 Heat olive oil in a skillet over medium heat. Cook ground beef or turkey until browned, breaking it apart as it cooks. Drain any excess grease.
3 Stir in taco seasoning, tomatoes, black beans, and corn. Simmer for 5-10 minutes, adding a little water if needed.
4 In a large bowl, mix together the cooked spaghetti, sour cream, salsa, and 1 cup of the shredded cheese.
5 Add the taco meat mixture to the pasta and mix to combine.
6 Pour the mixture into the prepared baking dish and top with the remaining cheese.
7 Bake uncovered for 20 minutes or until the cheese is melted and bubbly.
8 Garnish with chopped green onions and serve. Enjoy!
