Sweet and Sour Chicken
Ingredients:
– 1 pound chicken breasts, cut into bite-sized pieces
– cup cornstarch
– 2 eggs, beaten
– cup vegetable oil
For the Sauce:
– cup sugar
– 4 tablespoons ketchup
– cup white vinegar
– cup soy sauce
– 1 tablespoon cornstarch mixed with 1 tablespoon water
For Stir-Fry:
– 1 bell pepper, chopped
– 1 onion, chopped
– 1 cup pineapple chunks
Directions:
1. Prepare the Chicken:
– Coat the chicken pieces in cornstarch, dip in beaten eggs, and fry in a pan with vegetable oil until golden. Set aside.
2. Make the Sauce:
– In a saucepan, whisk together sugar, ketchup, vinegar, and soy sauce. Bring to a simmer, then add the cornstarch slurry. Stir until thickened.
3. Stir-Fry the Veggies:
– In the same pan, stir-fry bell pepper, onion, and pineapple for 3-4 minutes until tender.
4. Combine and Serve:
– Add the fried chicken to the vegetables and pour the sauce over. Toss everything together and serve hot!
