Ingredients
Crust:
2 cups crushed Pop-Tarts (Strawberry flavor)
1 cup graham cracker crumbs
½ cup butter, melted
Strawberry Layer:
1 cup strawberry preserves
1 tbsp cornstarch (optional, for thickness)
Cheesecake Filling:
3 (8 oz) blocks cream cheese, softened
1 cup sugar
3 large eggs
1 tbsp vanilla extract
½ cup sour cream
2 tbsp all-purpose flour
Icing & Topping:
1 cup powdered sugar
3 tbsp milk
½ tsp vanilla extract
Rainbow sprinkles for decoration
Instructions
Make the Crust:
Preheat oven to 325°F (163°C).
Mix crushed Pop-Tarts, graham cracker crumbs, and melted butter until combined.
Press into a springform pan and bake for 10 minutes.
Prepare the Strawberry Layer:
Spread strawberry preserves over the crust (heat slightly for easier spreading).
Make the Cheesecake Filling:
Beat cream cheese, sugar, and vanilla until smooth.
Add eggs one at a time, mixing on low speed.
Stir in sour cream and flour until combined.
Bake the Cheesecake:
Pour the batter over the strawberry layer.
Bake at 325°F (163°C) for 45-50 minutes, or until set.
Let cool completely before refrigerating overnight.
Make the Icing & Decorate:
Whisk powdered sugar, milk, and vanilla into a smooth glaze.
Spread over the cheesecake and sprinkle with rainbow sprinkles!
